In 2014, Lindsay and Karl Bond began home-distilling spirits using foraged ingredients from Macclesfield Forest in Cheshire. Forest Distillery has since become a globally recognised leader in fine spirits, expanding into whisky production and relocating to the Cat and Fiddle within the Peak District National Park. Forest Gin has won double-gold medals at the San Francisco Spirit Awards. Forest Distillery remains a small, independent operation, using traditional methods and high-quality ingredients to create signature products with pure, natural flavours.

The Cat and Fiddle proudly holds the distinction of being the UK’s highest-altitude distillery, situated at an elevation of 1,689 feet. Within the cosy 200-year-old stone building, guests can enjoy a unique drinking experience. Distillery tours provide an exclusive glimpse into the alchemy of Forest spirits, featuring the copper stills housed in a rebuilt barn and the seventeenth-century craftsmanship that shapes the production process.
